Think you don’t have time for a healthy dinner???
This is one of my go-to quick and easy dishes:
1/2 red bell pepper
6 spears asparagus
1/2 red onion
1 baby bok choy
6oz cooked ground turkey
1/2 cup light coconut milk
3oz raw baby spinach set aside
All veggies except spinach chopped and sauteed on high heat stirring often, still crunchy but glistening.
Add precooked ground turkey to heat through.
Reduce heat to medium and add coconut milk. Add spices. Let the liquid reduce.
Place raw Spinach into a large bowl and top with your hot dish and stir. Let it sit for 3 minutes to let the spinach wilt.
